Extended Instructions For Making Wine From Kits

The number of steps in wine making can be anywhere from five to eight - this depends on what you are using to begin with, actual grapes or their concentrate. If using grapes, you will need to begin by harvesting them. Do not leave behind any stem fragments on the grapes - remove them carefully. This is an absolutely essential step as very bitter tannins are contained in the stems that can have a heavy influence on the wine.
Once the stems have been removed, the skins of the grapes will then need to be broken in order to release the juice from the fruit. There are several methods to do this. Crushing is the preferred method for most wine makers. The taste you get from the wine will depend on the extent to which you crush the grapes. Leaving the berries almost whole will get you a wine that has a fruit like aroma.
Primary fermentation is the next step you have to do. This step is the step of fermentation of the sugars in the juice by the yeast cells. This will convert the sugars into alcohol and carbon dioxide then in some cases, more yeast will be needed. If you depend only on the yeast present in the grapes, your conversion won't be continuous so you will need additional yeast.
Now, you have to squeeze more juice from the grapes.You have completed the step of primary fermentation, but now you can remove more juice from the fruit. It should be noted that the juice that is extracted in this step is typically not as high of a quality as the juice that is extracted during the crushing phase. During the first crushing of the grapes, the free run juice that you got did not come into contact with the stems and skins of the grapes - this is what made that juice taste better. But you must not think that this press juice is of no use. Even in the large wineries, press juice is used to a great extent to improve the overall yield.
There is a second fermentation after this pressing process, which is concurrent with the aging process of the wine. Wine makers decide according to their personal needs how long to allow their wines to ferment.
You will have to add the finishing touch to your wine making with bottling. Bottle the wine by directly pouring it into bottles, then to stop the fermentation and to preserve the wine, add some sulfites into the bottles. The final step of the whole process is to seal the bottle with a suitable cork.
